Chocolate Coconut Date Bites
Let me just say, these are a must-have every week!
These little bites are made with only 4 simple ingredients, and yes, you could more ingredients to the mix, but we are keeping it simple so this recipe can be memorized.
They have the perfect balance of sweetness and crush the toughest sweet craving, you’re welcome!
My favorite way to store them is in the freezer as the texture becomes more tense and the flavors come together in perfection.
These bites are naturally sweetened with dates and pack in a bunch of nutrients. Nuts, dates and cocoa are all nutrient powerhouses. Let’s talk ingredients!
Dates are high in fiber, rich in antioxidants, and one of my favorite highlights to share features dates may be helpful in lowering inflammation in the brain to help prevent Alzheimer’s disease.
*Remember there is NO-added-sugar in this simple combo. And yes, dates are sweet, but they have their own magical balance between fiber, nutrients, and sweetness to help keep blood sugar levels stable (no spikes).
There is no need to shy away from this nutrient powerhouse!
Chocolate Coconut Date Bites
Ingredients
- 1 1/2 cups dates, pitted
- 1 cup nuts (any variety)
- 1/4 cup cocoa
- unsweetened coconut
Instructions
- 1. Place dates in a food processor and process for about 15 to 20 seconds. 2. Add nuts to the dates and process until mixture comes together. 3. Stir in cocoa to the mixture and pulse lightly once combined. 4. Using a cookie scoop, scoop out the mixture and form a ball using your hands. Roll the date bite in the coconut and repeat method. Place them in a container and store them in the fridge. or freezer.

I cannot forget to talk about the benefits of nuts! Feel free to use your favorite type of nut from cashews to pecans, or a mixed variety of nuts. All nuts boast many essential nutrients such as vitamin E, magnesium, and selenium – just to name a few.
The benefits are huge from anti-aging (keeping wrinkles away, too), to heart health, and even mood boosting!
Selenium is a key nutrient that has been shown to help boost moods and aid in brain health. This is totally awesome!
