Fall-inspired salads are a great way to pack in filling fiber and add a variety of colors to your plate!

Do you ever go to a restaurant and think, “Why don’t my salads taste like this?” or “How can I make this at home?”  It is all about the ingredients!

The fun thing about fall salads are adding extra fiber to your salad from options like, roasted squash, roasted chick peas, lentils, quinoa, brown rice and more.  

Quick tips: *Buy sliced frozen squash and roast in the cubs in the air fryer.  *Buy cooked lentils, quinoa and rice.  They come packaged and can be heated in 90-seconds. 

Be creative and make it your own!  

My must-have ingredients include roasted chick peas with a drizzle of balsamic glaze and feta cheese crumbles – oh my goodness!
