I cannot get enough of these salads with a combo of crunchy, creaminess, and oh-so satisfying!
When I eat a salad, I am usually hungry an hour after because they are not that filling.
That is why each salad idea adds more beneficial fiber with no-cook items: 90-seconds cooked lentils and quinoa, plus canned beans.
This Mediterranean Power Salad bowl has everything from feta to pita chip to the secret ingredient – hummus! Just adding one or two teaspoons of roasted red pepper hummus levels up this salad.
The salad ingredients include: Stacy’s Pita Thins, feta cheese, English cucumber, tomatoes, onions, lettuce, roasted red pepper hummus, canned chickpeas (drained & rinsed), and Newman’s Own Classic Oil & Vinegar dressing.
Onto salad #2 – Fiesta Chicken Power Salad Bowl!
I love using the cooked fajita chicken strips from Target. I use a food cutting shears to easily dice up into bite sized pieces.
Plus, my to favorites: blue corn tortilla chips & pico de gallo, such winning ingredients.
Add your favorite Mexican shredded cheese, avocado or guacamole for more added flavor.
The ingredient that brings a flavor pop is the Cilantro dressing from Trader Joes. I was surprised that I enjoyed this dressing because I am not the biggest cilantro fan. It has a light, fresh flavor that pairs nicely with the heat of the salsa. I found this dressing in the refrigerated section at Trader Joe’s.
Power Salad #3 – Buffalo chicken salad is addicting!
I make a little shortcut by using the store-bought buffalo chicken dip (at Target), mixed with cooked shredded chicken, and add one or two teaspoons of buffalo sauce.
Mix all ingredients together for the star of the show!
I added chopped celery, and carrots for a fresh crunch. The 90-second rice and quinoa blend for added fiber to make it more filling.
And for a crunchy companion, buffalo pretzels thins are the perfect match for this salad. My kids love these buffalo pretzels thins and I had to run back to the store to buy for this post!
Each salad idea can be made ahead in a glass jar and store up to 4 days. Here is how I layered the salad to make sure ingredients would stay fresh.
Start at the bottom of the jar in this order.
- Dressing
- Chopped vegetables
- Whole grains or beans
- Lettuce
