Single Serving Taco Dip

You had me at chips and dip!  Yes, those two always catch my attention and I probably them eat every single day. What about you?  Do chips and dip pull at your heart strings?  

So, as I finish a container of my favorite dip, I think to myself, “Wait, why not make this an entire lunch for myself!  And a lunch that is filling and nourishing!”  

Are you game?!  This dip excites me because you feel like your eating habits might be a bit off key, but seriously it is packed with antioxidants!  All the while being made with filling protein, healthy fats and easy to eat fresh veggies.  Don’t worry there is plenty of room for tortilla dips, so why not have both? 

This entire 5-inch by 7-inch dish of dip is all yours, enjoy!  Make ahead for lunch and pair with some fruit or yogurt.  It is so simple to make! 

The base of this dip is Greek nonfat yogurt.  Add one tablespoon of your choice of taco seasoning to a small (5.3 oz) container of yogurt.  Mix together and spread evenly in a 5-inch by 7-inch container. 

Next add a layer of your choice of hummus, guacamole and/or salsa.  I really enjoy verde salsa instead of guacamole.  Verde salsa is a cross between guacamole and salsa.  Many brands use a tomatillo-based salsa. 

Top your layered taco dip with shredded cheese, lettuce, chopped tomatoes and onions. 

Make this dip your own and add your favorite dips and pair with your favorite vegetables.  

This dip can be enjoyed with fresh vegetables, tortilla chips or in my case both!

Single Serving Taco Dip

Ingredients
  

  • 5.3 oz Greek non-fat yogurt
  • 1 Tbsp. taco seasoning
  • 1-2 Tbsp. hummus
  • 1-2 Tbsp. salsa
  • 1-2 Tbsp. guacamole (or verde salsa)
  • 1-2 Tbsp. shredded cheese
  • shredded lettuce toppings
  • tomatoes, diced topping

Instructions
 

  • Mix yogurt and taco seasoning. In a 5-inch by 7-inch container, spread out the yogurt and seasoning mixture. Next, add a layer of each: hummus, guacamole and/or salsa. Top with shredded lettuce, cheese and chopped tomatoes and onions.
