Cucumbers contain more nutients than you may think, they are made up of mostly water but pack quite a few nutrients, esp in the peel (fiber + antioxidants).
Studies have focused on the benefits of cucumbers linked to a variety of health benefits including: bowel regularity, weight loss, decrease blood sugar, bone and skin health and many more!
Cucumbers might be my favorite vegetable because they are crisp, crunchy and can be dipped in anything!

Here is a simple, colorful salad that I cannot stop talking or thinking about! Every ingredient makes this easy salad outstanding!
I call this salad a simple power bowl because I added a boost of grains with all the vegetables. Feel free to add a source of protein but the RightRice actually packs in a good amount of protein – 10 grams per serving! In addition to the protein, RightRice also provides 5 grams of fiber. Right Rice is made from lentils, chickpeas, and green peas + rice to deliver a healthier alternative.
It is extremely easy and fast to cook. In a saucepan, boil water then add RightRice, cover and remove from heat for 10 minutes. I have only tried the original variety and cannot wait to try more flavors. Here’s a link on Amazon: RightRice
My favorite “no recipe” recipe type of meal, or I like to call it, “clean out the frig!”
Here are the ingredient you will need:
Greens
RightRice
Veggies (peppers, cucumbers, red onions)
Feta cheese
Olive oil and vinegar dressing (I really like Newman’s Own)
This salad even tastes good the day after (with dressing), so you could easily prep it the day before and pack for lunch.
