Why You’ll Love These Chocolate Peanut Butter Cups

  • Added-protein + fiber-rich for better satiety (with 7gm protein & 3gm fiber/cup)
  • Taste like a dessert but made with nourishing ingredients
  • Just a few simple pantry staples
  • No baking required
  • Perfect for breakfast (yes, really!) or an anytime snack
  • Freezer-friendly and totally meal-prep approved
  • Satisfies sweet cravings without the blood-sugar crash

Ingredients

  • ¾ cup peanut butter (or almond butter)
  • ¼ cup maple syrup (a little for sweetness)
  • ½ cup chocolate or vanilla protein powder
  • ½ cup ground flaxseed (adds fiber + healthy fats)
  • ¼ cup mini chocolate chips
  • Optional: Chia seeds, chopped peanuts, flaky sea salt

Ingredient Notes

  • Protein powder: Whey or plant-based both work. Choose one that blends smoothly.
  • Nut butter: Natural peanut butter gives the creamiest texture.
  • Ground flaxseed: Boosts fiber, helps balance blood sugar, and makes the cups more filling.
    • When you are looking for flaxseed, make you buy ground flaxseed, this is the best way to absorb the benefits of the seed (if you eat whole flaxseed, you will not absorb any of the nutrients).

Expert Dietitian Tips

  • Crush your sweet tooth: They’ve got a balance of protein, healthy fats, and fiber — the trio that keeps blood sugar stable and helps prevent that “I’m starving, give me something now” feeling.
  • Fiber boost with heart-healthy omega-3’s: Omega-3s, which help reduce inflammation, support hormone balance, and keep you fuller longer.

Variations & Customizations

  • Almond Joy Style: Use almond butter + shredded coconut.
  • Cashew Cookie Dough: Cashew butter + vanilla protein + mini chocolate chips.
  • Mint Chocolate: Add a drop of peppermint extract to the chocolate.
  • Dairy-Free: Choose dairy-free chocolate chips and plant-based protein.
  • Kid-Friendly: Skip the protein powder and add a little extra nut butter + flax.

Storage & Meal Prep

  • Store in the freezer: Up to 3 months.
  • Store in the fridge: 1–2 weeks.

Instructions

  1. In a medium bowl, stir together the peanut butter and maple syrup until smooth and well combined.

  1. Mix in the ground flaxseed and protein powder. Stir until a thick dough begins to form.  Add the mini chocolate chips and gently fold them into the mixture.

  1. Using a cookie dough scoop, place about 1½ scoops of the mixture into each silicone cupcake mold. Use your fingers or the back of a spoon to press the mixture evenly into the mold so it forms a flat, compact cup. Place the molds in the freezer for at least 30–60 minutes, or until the cups are firm and set.

  1. Keep the chocolate peanut butter cups stored in the freezer for the best texture and freshness. Enjoy straight from the freezer!
