Pumpkin Snickerdoodle Cookies
Ingredients
- 6 tbsp butter melted
- 2/3 cup sugar
- 1/4 cup maple syrup
- 1 egg
- 1 tsp vanilla extract
- 2 cups flour (1 cup all-purpose flour, 1 cup whole wheat flour, optional)
- 3/4 cup pumpkin puree
- 1 tsp pumpkin pie seasoning
- 1/2 tsp baking powder
- 1/4 tsp baking soda
- pinch of salt
For coating
- 1/4 cup sugar
- 3 tsp pumpkin pie seasoning
Instructions

1. Preheat oven to 350 degrees. Coat a baking sheet or use a silicone baking mat.
2. To prepare the coating, combine the sugar and pumpkin pie seasoning in a small bowl and set aside.
3. In a separate bowl, whisk together the butter, sugar, maple syrup, egg and vanilla. Stir in the pumpkin puree.
4. In a bowl combine flour, baking powder, baking soda, pumpkin pie seasoning and salt.
5. Add the flour mixture, stirring until mixed well.
6. Using a cookie scoop or a spoon and spatula, drop dough onto a baking sheet. Sprinkle the seasoning and sugar mixture over each cookie dough ball.
7. Bake for 10-12 minutes. Cool on the baking sheet for at least 10 minutes before turning out onto a wire rack.
